Block butter (typically 80–84% fat) is the standard table and bakery form; AMF (anhydrous milk fat, minimum 99.8% fat on a dry basis) is a water-free concentrate used by food manufacturers and dairy processors who need maximum stability and shelf life in hot-climate and ambient-storage markets. Butter oil sits between the two, processed to remove moisture but not always to the full anhydrous specification.

AMF at 99.8% minimum fat is particularly valued in markets where cold-chain infrastructure is limited or expensive, because it can be stored ambient for extended periods compared with block butter. It is a primary ingredient in recombined butter and recombined dairy products — bakeries, confectioners, ice-cream producers and beverage manufacturers blend it with skimmed milk powder and water to reconstitute dairy fat at the point of use.
