About Cocoa Powder

Cocoa powder is produced by pressing cocoa liquor to extract most of the cocoa butter, leaving a dry cake that is then milled to a fine powder. The two main commercial types — natural (non-alkalised) and alkalised (Dutched) — have markedly different characteristics. Natural cocoa powder is lighter brown, slightly acidic (pH roughly 5.0–6.0) and delivers a sharper, more intense chocolate note; it reacts with baking soda in leavened bakery applications. Alkalised cocoa powder is treated with an alkali solution to neutralise acidity, producing a darker colour, milder flavour and much better solubility in water or milk — this is the grade most buyers in the beverages, dairy and coatings markets specify.

Fat content is the second key specification: standard cocoa powder runs 10–12% fat (sometimes labelled low-fat or medium-fat), while high-fat grades at 20–22% fat give a richer mouthfeel and are used in premium drinking chocolate and certain coating applications. Colour value (expressed as Minolta L*, or visually from light brown to near-black for heavily alkalised grades) is increasingly important for beverage and dairy end users who want consistency across production runs.

Origin matters to buyers sourcing for traceability or quality positioning. The dominant cocoa origins processed in the Netherlands and Belgium are Côte d'Ivoire (Ivory Coast) and Ghana, which together account for roughly two-thirds of global cocoa production. West African beans are preferred for their reliable yield and flavour consistency in large-scale food manufacturing. Dutch and Belgian processors — including some of the world's largest cocoa processing facilities — are located in Amsterdam, Zaandam and Antwerp, making the Netherlands and Belgium the foremost European cocoa powder suppliers.

Primary buyers are food and beverage factories, bakeries, confectionery producers, instant beverage manufacturers and dairy product makers. Drinking chocolate and hot cocoa mixes typically specify medium to heavily alkalised powder for colour and solubility; biscuit and cookie doughs use natural or lightly alkalised grades for flavour; compound coatings and ice-cream ripples use alkalised for colour stability. Industrial repackers serving retail also take larger volumes in 25 kg bags.

Cocoa powder ships in 25 kg multi-wall paper bags, palletised and container-loaded, FOB Rotterdam or Antwerp. Temperature and humidity control during transport and storage are important because cocoa powder absorbs moisture and odours; export cartons are sealed and bags are moisture-barrier lined. CIF quotations to Abidjan, Dakar, Colombo and other destination ports are prepared once product grade, quantity and destination are confirmed. Cocoa powder combines naturally in mixed containers with full cream milk powder and biscuits for buyers supplying bakery or beverage factories.
